Kale, Caramelized Onion, Goat Cheese Breakfast Barley

Ingredients: Makes 6 servings

2 TBSP Canola Oil
1 1/2 cup Yellow Onions, julienne sliced 
2 cups Kale, chopped
10 cups Water 
2 cups Barley, dry 
2/3 cups Goat Cheese 
1 tsp Salt 
1/4 tsp Black Pepper 

Directions:

  1. Heat oil in a pot. Cook onions until caramelized.
  2. Stir in kale and cook just until wilted. Set aside.
  3. Bring water up to a boil. Stir in barley and reduce to a simmer. Cook until barley is very tender.
  4. Once barley is cooked, stir in reserved onion/kale mixture, goat cheese, salt and pepper. Continue cooking until heated through.
